Pork Chops with Mango Salsa


This recipe is a hit everytime. It is simple to make and has a great presentaion. The salsa can also be used on grilled chicken or fish. We also use leftovers in chicken wraps. Enjoy!


6 Servings

6 pork chops
1, 15 oz. pineapple tidbits, save juice
1 c. mango, peeled and diced
1 small red onion, diced
¼ c. fresh cilantro, chopped
1-2 jalapenos, seeded minced
2 T. lime juice
¼ c. soy
2 cloves garlic, minced
½ c. brown sugar
1 t. ginger minced

Marinade
Mix together reserved pineapple juice, brown sugar, soy and garlic. Marinate pork chops in refrigerator overnight in a zip-lock freezer bag.

Salsa
Mix pineapple chunks, mango, onion, cilantro, jalapeno, lime juice, and ginger. Cover and let set at least 4 hours.

Grill marinated chops 6-8 minutes depending upon thickness. Let meat rest for 10 minutes. Spoon salsa over chops.
